Olivier BERNARD, gérant du Domaine de Chevalier, a souhaité un bâtiment fonctionnel, harmonieux, et qui réponde à une volonté sincère de développement durable :

• en utilisant les ressources naturelles : 150000 kWh sont produits chaque année par la toiture photovoltaïque grâce à l’énergie du soleil (représentant environ 40% de la consommation totale du Domaine), les eaux de pluie sont toutes récupérées (environ 800 m³ par an) afin de constituer une réserve d’eau en cas d’incendie.
• en mettant en œuvre des matériaux régionaux (bardage en Pin des Landes), et en faisant travailler des entreprises locales,
• en privilégiant l’isolation thermique et un système de chauffage/climatisation très peu énergivore : le système adiabatique.

« La promotion d’un Grand Cru doit aujourd’hui intégrer les exigences légitimes en matière de protection environnementale. Son image et sa renommée internationale relayées par la presse, les moyens audiovisuels et les nouveaux médias amplifient les retombées médiatiques classiques d’une telle démarche.

Ce nouveau chai du Domaine de Chevalier sera intégré dans le parcours de nos quelques 12 000 visiteurs annuels et sera le symbole de notre volonté de gérer l’environnement avec autant de soins que ceux apportés à la production d’un grand vin, dans le respect absolu de la terre et du fruit. »
